Pizza, one of the most popular dishes in the world! So what makes our Pizzas so special. One of the most notable methods is the use of biga dough, a traditional Italian starter that enhances the flavour and texture of the final product. Biga is a type of pre-ferment that consists of flour, water, and a small amount of yeast, which is allowed to ferment for an extended period. This process develops complex flavours and improves the dough's structure, resulting in a superior crust.

Cold fermentation is another critical aspect of high-quality pizza production. By allowing the dough to ferment at lower temperatures over an extended period, typically 24 to 72 hours, the flavours become more pronounced, and the dough achieves a desirable chewy texture. This method not only enhances the taste but also contributes to the digestibility of the pizza.

The cooking method plays a significant role in the final product as well. A unique handmade wood-fired oven is often employed to achieve the ideal cooking conditions. The intense heat generated by the wood fire allows for rapid cooking, resulting in a crispy crust while retaining moisture in the toppings. This technique is essential for creating the characteristic char and flavour that distinguishes authentic pizzas.

Quality ingredients are paramount in pizza making. The use of 100% buffalo mozzarella, for instance, elevates the dish to a new level. Buffalo mozzarella is known for its rich, creamy texture and slightly tangy flavour, which complements the other ingredients beautifully. When combined with fresh, high-quality toppings, the result is a harmonious blend of flavours that is both satisfying and memorable.
